Question

Brent is a light, sweet crude, while many Middle-East crudes are heavy and sour and trade at a discount to it. If the heavy sour barrel is "worse," why would a refinery ever actually prefer it, and what decides whether the discount is worth taking?

Let's untangle why a "worse" barrel can be the better buy. The trick is to stop thinking of crude quality as one dial and split it into the two physical properties that actually drive a crude's value: how light it is and how clean it is. These are independent axes, and a crude can sit anywhere on the grid.

API gravity (light versus heavy)
API gravity is just a measure of density. A high API number means a light crude; a low number means a heavy crude. Light crude contains a larger fraction of the molecules that turn into high-value products like gasoline and diesel, so it is generally worth more. Heavy crude yields more of the low-value heavy bottoms (fuel oil, bitumen) and needs more processing to make useful products. As a rough orientation, light crude sits above about 31 degrees API and heavy below about 22.

Sulfur content (sweet versus sour)
"Sweet" crude is low in sulfur; "sour" crude is high in sulfur. Sulfur is a contaminant: it corrodes equipment, poisons the catalysts inside processing units, and must be stripped out to meet fuel specifications and environmental limits. Removing it costs money, so sweet crude commands a premium and sour crude trades at a discount. The usual dividing line is around 0.5 percent sulfur by weight, below which a crude is called sweet.

Put the two axes together and you get a quality map. The most valuable crudes are light and sweet (easy to turn into clean products, like Brent and WTI). The cheapest are heavy and sour (hard and costly to process, like many Middle Eastern, Canadian, and Latin American grades). Note these really are separate: a crude can be light and sour, or heavy and sweet, so do not collapse them into one number.

Why a refinery might prefer the heavy sour barrel
Here is the key insight: the discount on a difficult crude is not a flaw, it is the reward for complexity. A heavy sour barrel still contains valuable molecules; they are just locked up in heavier chains and wrapped in sulfur that has to be removed. The question is whether your refinery can do that work.

A simple refinery only separates crude by boiling point and is stuck with whatever yield the crude naturally gives. Feed it heavy sour crude and it produces a lot of low-value bottoms and struggles with the sulfur, so it cannot capture the discount. A complex refinery adds conversion units. A cracker breaks heavy molecules into lighter, more valuable ones; a coker takes the very heaviest residue and converts it too, while desulfurisation units strip out the sulfur. A refinery built this way can buy the cheap heavy sour feedstock, do the extra processing, and still sell the same slate of clean gasoline and diesel as it would from expensive light sweet crude. It pockets much of the discount as extra margin. That is precisely why complex refineries are more valuable: they turn a "worse" barrel into the same products at a lower input cost.

What decides whether the discount is worth it
You compare the discount you are handed against the extra cost you must spend to process the difficult barrel, and pocket the difference only if you have the kit to do the processing at all. Concretely, weigh the per-barrel discount against the extra processing cost (energy, catalysts, sulfur removal, and the value lost to a slightly worse product yield). If the discount more than covers that extra cost, the heavy sour barrel is the better buy for a refinery equipped to run it; if not, you pay up for the light sweet barrel.
